This gluten free Toasted Luxury Berry Nut Muesli is brimming with toasted hazelnuts, sliced almonds, pumpkin seeds and delicious dried berries and has no added sugars or oils.
50gramsdried white mulberriesapproximately 1/2 cup
60gramsdried blueberriesapproximately 1/2 cup
60gramsdried goji berriesapproximately 1/2 cup
25gramsdried strawberry bits, optionalapproximately 1/2 cup
Instructions
Heat the oven to 180 degrees celcius or 160 celsius in a fan assisted oven / gas mark 4 / 350 F.
Place the hazelnuts, pumpkin seeds and sliced raw almonds on a baking sheet in a single layer and toast for 5-10 minutes until golden brown and at least one shade darker. The almonds will color quickly so take care that it doesn't burn.
Remove the nuts from the oven and allow to cool on the counter. Don't forget to turn off the oven.
To a large mixing bowl add the oats, dried berries and cooled nuts and toss around.
Fill glass jars with muesli and serve as required with yogurt and fresh sliced fruits or milk.
Notes
Toasting the nuts brings out the natural oils and adds depth of flavor and crunch.
Watch the nuts and remove from the oven when the almonds are a toasty golden brown, not black! They should be a shade darker than they were when you put them in and you will be able to smell them.
For an interesting alternative to oats try a 5 grain cereal mix. It usually includes oats, spelt, quinoa, buckwheat and barley.
