Ingredients
  

Poached chicken

  • 1 kg chicken breast 3-4 bone-in breasts
  • 240 grams onion 1 peeled and quartered
  • 2.5 ml salt

Spring roll filling ingredients

  • 30 ml olive oil
  • 240 grams onion 1 peeled and finely diced
  • 500 grams carrots 4 peeled and coarsely grated
  • 75 grams green bell pepper 1/2 deseeded and finely diced
  • 75 grams red bell pepper 1/2 deseeded and finely diced
  • 25 ml garlic finely minced
  • 15 ml cumin powder
  • 1 green chilli finely chopped
  • 10 ml salt to taste
  • 5 ml black pepper freshly ground
  • 250 ml fresh coriander leaves and stems finely chopped
  • 250 ml mozzarella cheese grated
  • oil for frying

Assembly

  • 25 spring roll wrappers
  • 60 ml cake flour
  • 30 ml water

Instructions
 

Poaching chicken breasts

  • Place the bone-in chicken breasts, onion and salt in a pot or high rimmed pan and cover with water.
  • Bring to a boil then reduce to simmer and cover the pot with a lid.
  • Poach for 25-30 minutes until the chicken is cooked through.
  • Remove from the heat and leave to cool then shred the chicken.

Spring roll assembly

  • Sauté the onions with oil until lightly golden then remove from the heat and leave to cool completely.
  • Peel and grate the carrots then wrap in a clean dish towel and squeeze out the excess liquid. This will prevent a soggy filling.
  • Mix the cooled chicken and onion with the grated carrot and diced peppers, chopped herbs, chilli and spices.
  • Add the cold grated cheese to the vegetable mixture and mix to combine.
  • Make a paste from the flour and water.
  • To assemble the spring rolls take one sheet and brush with the flour and water paste on three sides.
  • Place a tablespoon of filling near the bottom of the wrapper on the end closest to you.
  • Fold the left and rights sides toward the center then roll the bottom edge away from you. Continue rolling until you seal with the top edge.
  • Fry in hot oil until golden and drain on kitchen paper.
  • Serve warm with your favorite dipping sauce.
